In backyards across the world, fierce debates rages over whether charcoal or propane gas is better for barbecue cooking. Often forgotten in this argument between amateur barbecuers is cooking on wood. Professional and hard-core barbecue hobbyists, however, never ignore this option. Barbecuing with wood has several benefits and drawbacks, times and places where it is better or worse to use. This article will give you a quick run down on where hardwood cooking fits in the barbeque universe.
The main advantage to cooking with wood is, of course, the wonderful aromatic, smoky flavor it lends to the meat. Charcoal briquettes contain many additive, resins, and fillers to help the briquettes keep their shape and burn evenly. Unfortunately this, along with the lighter fluid needed to start the briquettes, can impart a chemical taste to the meat. In grilling, where meat is cooked directly over a high heat for only a few minutes, this is not too big of a problem. In barbequing, where meat is cooked indirectly over a low heat for several hours, this chemical taste builds up until it is hard to ignore. For this reason, barbecuers and smokers prefer to cook on wood, or at the very least hardwood lump charcoal.
There are some drawbacks to cooking with hardwood, of course. It is a difficult fuel to use. Unless you know what types of wood to use with which meat, the resulting flavor can be disastrous. Finding the right wood is not always easy, unlike charcoal briquettes which can be bought anywhere, you may have to go to a specialty store to find the tight cooking wood. Wood is more difficult to light and keep lit than charcoal, and doesn’t burn as evenly. Different woods burn at different temperatures and speeds, and one has to carefully monitor the temperature, shift the coals, and adjust the air vents to maintain proper heating. Given that barbecuing generally takes several hours, this can be a tedious task (or a relaxing one, if you have enough beer and friends to chat with). For this reason, busy suburbanites prefer the speed of grilling on simpler, easier charcoal or gas grills.
If you want to try barbecuing with wood, here are some general guidelines to help you pick the right wood for the right meat. Let’s start with what NOT to use. Avoid soft woods like cedar, or coniferous woods (evergreens) like pine and fir. Such woods contain lots of sap, tar, and other resigns that release chemicals into the smoke that gives the cooked meat a bitter, acidic taste.
Otherwise, hardwood form any deciduous (flowering) tree is safe to use. Make sure you use natural, untreated wood. Don’t, for example, buy oak planks from a hardware store they are frequently treated with chemicals you don’t want in your food. Finally, use only wood that is cured and dried. Not only are green woods hard to burn and produce the wrong flavor, but they can damage your cooker.
Obviously some hardwoods are more aromatic than others. Hickory, Oak, and Maple are the most common smoke woods, mainly because they have a strong, smoky flavor that works well with any meat, but particularly beef and wild game. Mesquite has a strong, slightly sweet flavor popular with Tex-Mex barbecue due to Mesquite’s refusal to have its flavor drowned out by spicy sauces. Don’t burn too much Mesquite for too long, though the Mesquite flavor can quickly build up and become bitter.
Medium smokewoods include fruit and nut trees. Fruit woods such as Apple, Cherry, Pear, Peach, Apricot, and Grapevine are milder with a sweet, fruity flavor, and work well with pork and poultry. Nut woods like Pecan, Walnut, and Almond also have a medium flavor, slightly sweet and nutty, that work well with pork, poultry, vegetables, and cheese.
Finally, woods like Alder, Ash, and Lilac produce a very light, mild smoky flavor that is good for lamb and especially seafood, where the natural fish flavor can quickly be drowned out by strong smoke.
